Overnight Oats

Hurray for oatmeal, yet again!  Here I offer you a different take on oatmeal, one that you can make the night before so that you can rush out the door with a healthy breakfast in hand.  The options are endless, so you can constantly change it up!  Since I gave this recipe to my brother a few months ago, he has eaten it every single morning.  Overnight oats save the day.

Overnight Oats

Serves 1
Time: 5 minutes

Ingredients:

1/2 cup old fashioned oats
1/2 cup liquid (water, milk of any variety)

Options:
Fruit (bananas, blueberries, strawberries)
1/2 teaspoon sweetener (maple syrup, brown sugar, honey, agave)
Chopped nuts 
Granola
Peanut butter
Jelly/jam

Directions:

1.  Combine the oats and liquid of choice.  Add sweetener if using.  The base should always be in a 1:1 ratio, so you can adjust your portion as you like.

2.  Add in whatever you like!  You can mash a small banana and stir it in, or slice and layer it in with the oat mixture.  Frozen fruit works well here as it will defrost and release the juice into the oats.  Any nuts or granola added will soften as it refrigerates.

3.  Refrigerate for at least 8 hours.  When ready to eat, add in fresh granola or nuts for a crunch, or add a spoon of nut butter for extra protein.  Enjoy!
