Spicy Pimento Cheese

Pimento cheese is a classic Southern sandwich, and I go crazy for it whenever I see it on a restaurant's menu.  Whether it's on top of a burger or toasted on white bread, pimento cheese is perfection all day, every day.  Now with this recipe, I can make it anytime I want, and you can too!  Craving satisfied.  

My dad sent me this recipe from AL.com where it was featured in a special on the Masters (pimento cheese is the official sandwich of the Masters – points for the sandwich, not for the golf).  

Spicy Pimento Cheese

Makes 3 cups (note: large amount, I only make half for a week of sandwiches)
Best if made the day before to allow the flavors to mingle

Ingredients:

2 cups extra-sharp cheddar cheese, shredded
8 ounces cream cheese, softened
1/2 cup mayonnaise 
1/4 teaspoon garlic powder
1/4 teaspoon ground cayenne pepper
1/4 teaspoon onion powder
1 jalapeno pepper, seeded and minced
1 (4-ounce) jar of diced pimentos, drained
Salt and black pepper to taste

Directions:

Combine the ingredients in a jar and mix until well combined.  Season with salt and pepper.  Refrigerate overnight or at least for several hours before serving.
