Oven Roasted Fish Fillets

I have been trying to up my fish game recently – gotta get that Omega-3-fatty-acid and lean protein!  Until this recipe, I always had an excuse for avoiding cooking fish.  Not anymore, this baby is done in 15 minutes and can be cooked straight from frozen.  Perfect for your Lenten Fridays!

Oven Roasted Fish Fillets

Serves 2
Total Time: 15 minutes

Ingredients:

6-8 oz fish fillet (salmon, tilapia, mahi-mahi, halibut...), spiced as desired
2 tablespoons oil or butter

Directions:

Preheat the oven to 450ºF.  Heat an oven-proof cast iron skillet over medium-high heat, and add the oil or butter.  Once the butter is melted or the oil is shimmering, add the fish fillet, skin side down, into the skillet.  Cook for 3 minutes, spooning the hot oil over the top of the fillet intermittently.  Transfer to the oven and cook for 6-8 minutes for thinner cuts, 8-10 minutes for thicker cuts.  Enjoy!
