Chia Seed Pudding

I guess I'm a little late to the party for chia seeds, but they are pretty amazing.  If you just put them in liquid and leave them overnight, they make a wonderfully thick pudding the next morning.  They are a good source of iron, fiber, and vitamin C.  I have been enjoying this dish recently for these early morning PICU shifts, and it's making my life a whole lot better.  Enjoy!

Chia Seed Pudding

Serves 1
Time: 5 minutes

Ingredients:

1/2 cup whole milk
1/2 banana
1 tablespoon chia seed
1/2 cup granola of choice
1/2 cup fresh fruit (optional)
1 tablespoon protein powder (optional)

Directions:

Blend together whole milk and banana.  Pour into tupperware, and stir in chia seed.  Cover, and leave in the refrigerator overnight.

In the morning, stir in protein powder, granola, and fresh fruit.
