Rotting bananas sitting on the counter? Use those beauties to make some Sunday morning waffles.
Banana Chocolate Chip Waffles
Makes 8 waffles
Total time: 30-40 minutes, depending on the speed of your waffle iron
Ingredients:
2 cups all-purpose flour
1 tablespoon brown sugar
4 teaspoons baking powder
1/4 teaspoon salt
1 egg
1 3/4 cups whole milk
1/2 cup canola oil
1/2 teaspoon vanilla or almond extract
2 ripe bananas, peeled and mashed
2/3 cup semisweet chocolate chips
Directions:
1. Preheat the waffle iron.
2. Combine the flour, brown sugar, baking powder, and salt in a large bowl. In a second mixing bowl, whisk together the egg, milk, oil, and extract. Add the wet ingredients to the dry and stir until smooth. Add in the mashed bananas and chocolate chips and mix until smooth.
3. Spray the waffle iron as needed and add about 1/3 cup of mixture at a time. Cook until golden. Serve hot with your favorite waffle toppings.
Freezing and Reheating:
Allow waffles to cool to room temperature on a cooling rack. Store in freezer plastic bags. Rewarm in toaster, microwave, or oven until heated through.
