Baked Oatmeal

Another oatmeal recipe, I can't stop!  This one comes out almost like a custard, and it hits another level when served warm with milk.

Baked Oatmeal

Serves 8
Total time: 50 minutes

Ingredients:

3 cups old fashioned rolled oats
1 cup packed brown sugar
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
2 eggs
1 cup milk
1/2 cup canola oil

Directions:

Preheat the oven to 350º and grease a 8 x 8" square pan with nonstick spray.  In large bowl stir together the oats, brown sugar, baking powder, salt, and cinnamon.  In a separate bowl whisk together  the eggs, milk, and canola oil.  Fold the wet into the dry ingredients.  Pour into the prepped pan and bake for 40 minutes, or until the top begins to brown.

Reheats like a champ.  Freezes for a couple of months.
