Pumpkin Bread

It doesn't get any better than good old-fashioned pumpkin bread.  Easy to make, great for gifting, this recipe is a hit every time.


Pumpkin Bread

Makes 1 loaf
Time: 1 hour, 20 minutes

Ingredients:

2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon pumpkin pie spice
1/2 teaspoon cinnamon
1 1/2 cups sugar
1/2 cup oil
2 eggs, beaten
1 cup unsweetened pumpkin puree
1/4 cup water

Directions:

Preheat the oven to 350ºF and grease a loaf pan.  Sift the dry ingredients together in a large bowl.  Mix the oil, eggs, pumpkin, and water in a separate bowl.  Add the wet to the dry and stir until just combined.  Pour into the greased loaf pan.  Bake for 50-55 minutes, or until a toothpick to the center comes out clean.  

If the center is not done but the edges are browning, tent the pan with aluminum foil and continue to bake until the center passes the toothpick test.

Allow to cool for 5 minutes in the pan, then turn onto a cooling rack until completely cooled.
