Spaghetti squash is the delicious alternative to pasta when you're trying to eat more vegetables but are craving the pasta vibe. It is very easy to make, and with no extra effort on your part, really will come out like noodles. None of that fancy zucchini-noodle press gizmo stuff, you just need an oven and a fork to create the perfect pasta substitute.
Roasted Spaghetti Squash
Serves 4
Time: 30-45 minutes, depending on the size of squash
Ingredients:
1 spaghetti squash
Directions:
1. Preheat the oven to 400ºF. Slice the squash in half length-wise. Scoop out the seeds and stringy flesh as you would from a melon or other squash. Put the squash halves face-down on a baking sheet. Cook for 30 to 45 minutes, depending on the size of the squash. The bigger the squash, the longer the cook time.
2. When the squash is tender, remove from the oven and allow to cool for five minutes. Using a fork, gently scrape out the flesh into a bowl. Prepare as desired.
